Feeling cold? Warm up with this tasty red curry lentil soup

It’s getting colder and colder these days. What is nicer than enjoying a nice, warm soup on a rainy, cold day? Well…nothing, right?! 🙂
When you are vegetarian, you need to make sure to still eat enough protein. Lentils are full of protein, so they’re perfect for vegetarians! We’ve put together this delicious curried red lentil soup for you. Please DO try this at home!

Ingredients

  • 50 oz. water
  • 1 tablespoon olive oil
  • 3 garlic cloves
  • 3 handfuls dried lentils
  • 1 onion
  • 1 can diced tomatoes
  • ½ tablespoon red curry paste
  • 1 can coconut milk
  • a handful of fresh cilantro/coriander

How to prepare

  • Put lentils in a pot with boiling water and let it boil for 20 to 30 minutes.
  • Meanwhile, chop the onion and crush the garlic. Saute the onion and garlic in olive oil (in the soup pot).
  • Add the curry paste and coconut milk. Stir it well and let sit for 3 minutes.
  • Add the diced tomatoes and 50 oz. of water. Drain the lentils, add them to the soup pan and mix it all together.
  • Season with salt and pepper. Serve in bowls and top with cilantro/coriander.

You can count one cup of soup as a ½ serving vegetables and ½ serving protein. The amount of dairy is negligible.
