On the go snack: cranberry-vanilla energy balls

Do you also easily grab for unhealthy snacks when there are no healthy on the go snacks available? No worries we’ve been there and could totally relate to that in the past. When you’re hungry, you just want to eat something RIGHT NOW. You simply wave goodbye to your healthy resolutions because you can welcome them tomorrow again, right? Wrong! You just need to prepare yourself for this kind of situations – and no, you don’t need to work in the kitchen for hours. You can make this healthy on the go snack in only five minutes. And sweeties, trust me, I (Carlijn) never met anybody who is not in love with the cranberry-vanilla energy balls. Yes, I made them for a lot of people (read boyfriend, parents, friends, the neighbors, the neighbors of the neighbors, the neighbors of the neighbor’s neighbors… my dog… ok maybe not my dog but you get the idea, I simply adore this recipe). So girls, no excuses anymore! Eating healthy is a form of self-respect, time to give your body the respect it deserves.


For eight balls

  • 1-ounce cashew nuts
  • 1-ounce almonds
  • 2 ounces dried cranberries
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon water


Chop the nuts. Add the cranberries and mash them together.

After that, mix the nuts, vanilla, and water in a bowl and shape the dough into little balls. Put them on a plate and put in the fridge for about an hour.

Serving tip: Only take out the energy balls of the fridge when you will eat them soon or want to take them with you. This way they are the tastiest.
