Babes! It’s almost the time of the year … I’m sure you know what we’re talking about. Most of us have been waiting for this day for a loooong time. For the people who don’t know what we’re talking about, we will inform you… silence please… drum rolls… PANCAKE DAY! It will be in exactly one week (13th of February). So let the preparations begin;) And the good news is, you don’t even need to use your ‘joker’ because in this blog post we give you a healthy banana pancake recipe.

Nice little fact; pancake day is also called Shrove Tuesday, fat Tuesday and Mardi Gras (French meaning for Fat Tuesday). Pancake day is the last day of feasting before Lent begins on Ash Wednesday. It’s named that way due to the tradition of eating pancakes on that day and is celebrated for centuries. So girls, let’s prepare ourselves for this day like our ancestors did. Let us show you this delicious banana pancake recipe.

Ingredients

  • 1 ripe banana
  • 1 package of raspberries
  • 2 eggs
  • 1 tbsp. of honey
  • cinnamon
  • olive oil

Preparation

Put the banana in a deep bowl and use a fork to mash it until smooth.

Crack the eggs into the bowl and mix it well with the mashed banana, a pinch of cinnamon and a 1/2 tablespoon of honey.

Heat up a dash of olive oil in a stir-fry pan at a low temperature.

Spread the mixture out evenly into small circles in the pan. Bake both sides for about 2 to 3 minutes.

As soon as the pancakes turn golden brown, plate them and sprinkle the raspberries on top. Top the pancakes with some honey.
