Mediterranean Quiche

It’s healthy, tasty, ready in minutes, and simply just can’t fail. Nothing is as good as a home-made quiche and a fresh salad. Within 10 minutes it’s ready to put in the oven, and all you have to do is to drool in front of the oven window until you hear the ‘peep’ and voilĂ  there is your delicious dinner. Is this Mediterranean quiche also on your menu tonight?

Watch out! This recipe is for two persons, which means you take a halve quiche with salad. You need a 10-inch quiche dish.


  • 1 red onion
  • 2 eggs
  • 1/2 red paprika
  • 1/4 zucchini
  • 4 slices serrano ham
  • 8 olives
  • 6 filo sheets (or a readymade quiche crust)
  • 4 tomatoes
  • 8 hands arugula
  • Balsamico di Modena, olive oil, salt, and pepper.


Preheat the oven to 380 F.

Cut the onion, paprika, zucchini, serrano ham and olives into pieces. Place them in a bowl. Crack the eggs and mix with the rest of the ingredients.

Grease the quiche dish and spread out the filo sheets equally (only if you don’t use a ready-made quiche crust) and pour the filling into the pastry case. Put the quiche in the preheated oven for about 30 to 40 minutes.

Meanwhile, prepare the salad. Cut the tomatoes into big slices and sprinkle some salt and pepper on top.

Top the tomatoes with some arugula and sprinkle some balsamico di Modena and olive oil on top. Serve the quiche with the salad and enjoy!
