Coconut cookies

Today we want to spoil you with a healthy snack. That’s the way aha ha, we like it! Aha Aha 😉 For this healthy cookie recipe we’ll use coconut flour, you know why? Because we want to save a portion of carbs for you. When you use coconut flour, you only need a little amount in comparison to other flours. That’s an easy win girls! Besides that, coconut flour is gluten-free and usually cheaper than other flours, such as almond flour. We love these cookies because they remind us of coconut macaroons. YUM. Ingredients (4 pieces)

  • 2 large eggs
  • 1 tablespoon agave syrup
  • 1,25 oz. coconut flour
  • lemon zest
  • 1 teaspoon baking powder
  • 1 pinch salt

Preparation

  • Preheat the oven to 350 F. Wisk the eggs about 10 minutes together with the agave syrup until the mixture is smooth and fluffy.
  • Do you have a sweet tooth? Add another tablespoon of agave syrup, yummieee.
  • Wash and zest the lemon, use a fine grater.
  • Add the zest to the mixture. Mix in the coconut flour, baking powder and a pinch of salt (use a whisk).
  • Roll four little dough balls and lay them on the baking tray lined with parchment paper.
  • Use a tablespoon to press and shape the balls.
  • Bake for 10 to 15 minutes until golden brown.

4 cookies are equal to 0.5 portion carbs and 1 portion protein.
