Coconut cookies

Today we want to spoil you with a healthy snack. That’s the way aha ha, we like it! Aha Aha 😉 For this healthy cookie recipe we’ll use coconut flour, you know why? Because we want to save a portion of carbs for you. When you use coconut flour, you only need a little amount in comparison to other flours. That’s an easy win girls! Besides that, coconut flour is gluten-free and usually cheaper than other flours, such as almond flour. We love these cookies because they remind us of coconut macaroons. YUM. Are you going to bake these cookies today? Bon appétit!

Ingredients (4 pieces)

  • 2 large eggs
  • 1 tablespoon agave syrup
  • 1,25 oz. coconut flour
  • lemon zest
  • 1 teaspoon baking powder
  • 1 pinch salt

  • Preheat the oven to 350 F. Wisk the eggs about 10 minutes together with the agave syrup until the mixture is smooth and fluffy.
  • Do you have a sweet tooth? Add another tablespoon of agave syrup, yummieee.
  • Wash and zest the lemon, use a fine grater.
  • Add the zest to the mixture. Mix in the coconut flour, baking powder and a pinch of salt (use a whisk).
  • Roll four little dough balls and lay them on the baking tray lined with parchment paper.
  • Use a tablespoon to press and shape the balls.
  • Bake for 10 to 15 minutes until golden brown.

4 cookies are equal to 0.5 portion carbs and 1 portion protein.
