Chocolate muffins… Yummmmm. Dreams come true, because you can eat this chocolate muffin -made of chickpeas- with a good conscience. Perhaps you are already familiar with chickpeas because of all the scrumptious hummus and falafel recipes available nowadays. BUT, that’s not the only way how to use this multifunctional pea. Looks like we’ve found the chameleon of the legumes!

Chickpeas are rich in protein, iron, vitamin B, and tryptophan.
Trypto-what? An essential amino acid which our body can’t produce by itself, but is necessary for the production of serotonin, which contributes to a good mood and night’s rest. So, put on your best clothes and let the chickpea party BEGINNN!

Ingredients

  • 1 can of chickpeas
  • 1 ripe banana
  • 1 tablespoon of almond flour
  • 2 tablespoons of raw cacao powder
  • 1.8 oz. pure chocolate (at least 80 %)
  • 1/2 little bag of baking powder
  • 1 teaspoon of baking soda
  • 1/2 lemon

Preparations

  • Preheat the oven to 400 F.
  • Rinse the chickpeas and drain well.
  • Mash the peas together with the banana until a smooth texture forms.
  • Add the almond flour, cocoa powder, and baking powder.
  • Mix the juice of half a lemon with the baking soda, wait until it the lemon juice reacts with the baking soda. Add it to the batter.
  • Last but not least; as chocolate is veeery important of course. Chop the chocolate and mix it carefully.
  • Grease the cake moulds and fill up with the batter. Bake the muffins for about 30 minutes and let them cool down in the oven, with the oven door opened.
