Healthy lunch recipe

Meet black bun; a black hamburger bun. We wouldn’t be BodieBoost if we didn’t give this recipe a healthy twist. Instead of a hamburger, we used one of our favorite lunch recipes: green pea spread, topped with a boiled egg and some field lettuce. We love this easy, healthy recipe and are eager to share it! The great thing about green peas is that they are high in fiber, protein-rich and contain lutein.

This combination of components can improve your heart health by lowering the cholesterol level in the blood. Anddd, if you like to show off during your working day, this recipe is made for you;) The bright green color together with the black bun create a very appealing lunch. Your baker doesn’t sell black buns? No worries, you can easily use the standard recipe for hamburger buns. Create a healthier version by using spelt flour instead of wheat flour. Add a few drops of squid ink to the ingredients and there you go! Enjoy!

Ingredients green pea spread

  • 1.8 oz. green peas
  • 1 hand fresh mint
  • 1 tablespoon low-fat quark

Preparations

  • Boil the (frozen) green peas shortly. This ensures that the peas keep their beautiful bright green color.
  • Drain the green peas and mix it with the mint and quark until it forms a coarse mixture.
  • Add citrus pepper to taste.
  • In the meantime, boil an egg the way you prefer and top the bread with the pea spread and sliced egg. As a finishing touch add a bit of field lettuce on top.
  • Bon app├ętit!

You can count one sandwich as 1 x vegetables and 1x carbs. You can neglect the tablespoon of low-fat quark.
