Korean kimchi – the next (Asian) superfood. You don’t need to travel around the world to get to know other cultures. In our opinion, to get to know a country, you have to taste. And tasting is something you can do anywhere, also at home. We are eager to boost your recipe book! This time with a kimchi recipe, a traditional Korean fermented recipe where cabbage steals the show. Fermented foods are full of probiotics (good bacteria) which grow during the fermenting process. Probiotics help to keep your gut healthy. Besides its rich taste, it is also very healthy, contains little calories and is high in fiber. Traditionally kimchi is served as a side dish. We love to make a whole jar of kimchi and use the leftovers for a scrumptious special lunch. No simple sandwich recipe this time, but a recipe with a spicy and healthy twist. Without further ado, try out this Asian superfood. Please see the recipe below! 

Ingredients for the kimchi (1 jar)

  • 1 Chinese cabbage
  • 40 fl oz water
  • 3.5 oz salt
  • 3 garlic cloves
  • 2 inches fresh ginger
  • 1 fl oz of apple cider vinegar
  • 3 tbsp of fish sauce
  • 2 tbsp of agave syrup
  • 2 tbsp of paprika powder
  • 1 tbsp of sambal
  • 2 tbsp of sesame seeds

Ingredients for the toppings (+ sandwich)

  • 1 whole french bread
  • 2 slices of chicken fillet
  • 1 red onion
  • 1 tomato
  • curly endive

Preparations kimchi

  • Cut the cabbage into 8 pieces and place them in a large bowl. Let the salt dissolve in boiling water and pour it over the cabbage.
  • Let the cabbage soak in 4o fl oz. of water for half an hour and start to prepare the marinade. Peel the garlic and the ginger, blend it together with the vinegar and fish sauce until it forms a smooth mixture. Add the rest of the ingredients to thicken the marinade.
  • Rinse the cabbage with cold water and let it drain (very important!!). Place the cabbage in a weck jar and pour the marinade over it. Close the jar well and shake it.
  • Place the jar in the fridge for at least 3 hours. Tip: prepare it the day before you want to eat it. If you keep it covered in the fridge, you can keep the kimchi for at least one week.

How to top the French bread:

Top with a lettuce leaf, a layer of kimchi, red onion (cut into pieces), chicken fillet, tomato slices and lettuce. Generously top the sandwich and cut into halves for a beautiful but especially tasty result! Are you, or have you ever tried this Asian superfood? Let us know below!
