Quinoa salad recipe from the 12-week weight loss program

Quinoa, kwuh-NO-uh, KWIN-wah, however you pronounce it doesn’t really matter. What DOES matter is that this delectable recipe is very nutritious and easy to prepare. That’s the way aha aha we like it, aha aha ;)! Since the rise of the superfoods, quinoa stole the heart of myriad people all over the world. The literal meaning of Quinoa is super grain; the reason for this is because the grain is so high in nutrients. We love it!

No fast carbs with this recipe, but slow carbs which serve as a fuel for your body. Besides that, this quinoa salad is full of protein, which make you feel satiated. Char & I love a bit of variation in our diet and therefore want to challenge you by offering you a vegetarian recipe. What are the benefits of this you’re asking? Not eating meat one day per week has the same effect as not driving 775 miles… An easy way to help the environment, right? 

Ingredients

  • Tofu (as large as your hand)
  • Quinoa (2-3 handfuls)
  • 1 tsp. pesto
  • 1 vegetable bouillon cube
  • 2 large tomatoes
  • Arugula and fresh basil

According to the BodieBoost weight loss method this quinoa salad is equal to 1x protein, 1x carbs, 1x vegetables and 1x seasoning

Preparations

  1. Add the quinoa to a pan together with the pesto, the bouillon cube and add 14 fl oz. boiling water to it.
  2. Stir until the bouillon dissolves. Cover the pan by using a lid. Wait for 10 minutes until all the water is absorbed by the quinoa.
  3. Dressing: mix the olive oil with the pesto. Add to the quinoa and stir well. The dressing adds a luscious flavor to the recipe.
  4. Heat up a pan on a low fire. Crumble the tofu above the pan. Bake for 2 to 3 minutes untill the tofu loses its moist.
  5. Cut the tomatoes and add it together with the tofu to the plate. Garnish the plate with some arugula and basil to taste. Bon appétit!
